With back-to-school in full swing at my house, easy and delicious dinners are the order of the week. One of my favorites in this category is Sour Cream and Salsa Chicken. I copied this recipe from the Parenting Magazine Cookbook which I checked out from my local library many years ago. My children love this dish and request it often. Now they are even learning to cook it for themselves.
Sour Cream and Salsa Chicken is so easy that it almost isn't a recipe at all. When you realize that it is possible to saute some boneless chicken pieces and then add equal parts sour cream and salsa to create a delicious meal, you might say, "Why didn't I think of this?" The chicken is simmered in the sauce until it is done and then, just like that, dinner is ready!
I serve my Sour Cream and Salsa Chicken with steamed rice, corn or another vegetable, and warm tortillas for a Tex Mex feast. The chicken can be shredded and placed directly on the tortilla with the rice and a bit of cheese and rolled up as a taco or it can be eaten from a plate with some of the sauce spooned over the rice. It also stands up nicely to a big green salad and whole grain rolls.

Easy Sour Cream and Salsa Chicken
from the Parenting Cookbook
1 1/2 teaspoons vegetable oil
4 skinless boneless chicken breasts (or thighs)
1/2 cup salsa
1/2 cup sour cream
salt and pepper
- Heat oil in a large skillet. Add chicken pieces and brown on each side.
- Mix sour cream and salsa in a small bowl.
- Pour sour cream and salsa mixture over browned chicken pieces.
- Simmer 10-15 minutes, turning chicken pieces once.
- Add salt and pepper to taste.
- Serve over rice or rolled up in a tortilla.
