The rodeo is in full swing down here in Houston, Texas. My family and I are heading there next week and can't wait to fill up on foot long corn dogs, fried oreos, and calzones on a stick. While we wait, I decided to rustle up a batch of Cowboy Cookies for my posse.
These cookies are substantial enough to satisfy even the hungriest cowboys or cowgirls. They are filled with oats and chocolate chips and can even be made a bit healthier with the addition of a half a cup of wheat germ. They are also perfect for cleaning out all those half-filled bags in your baking cupboard. You could add coconut, dried cranberries, white chocolate chips, pecans, or peanut butter chips.
I ripped this recipe from the May 2006 addition of Family Fun magazine back when we lived in Maryland. It quickly became one of our family favorites even before we had any idea that we would someday live in real cowboy country. Now that we do they are even more enjoyable!
